It is no secret that I am a massive MASSIVE fan of Banana Bread
So when Thermomum_au invited me over to mix up a new Banana Bread recipe she came across on a Thermomix recipe share community my belly and I were 100% in.
It Is pretty AWESOME.
(high praise coming from a self-proclaimed Banana Bread fanatic)
Moist, light fluffy lecture with the dates giving a slight richness to it.
For me it lacked the seasonings I love to use, so I would add in cinnamon, or ground ginger, into the mix next time.
As you can see I also sliced a banana and laid it on top when it baked just as a different decorative top instead of having it plain.
If, like me, you cannot resist making a Banana Bread then look no further than the recipe and method below.
Quick and easy for manual making or Thermomix whizzers alike.
🍌130 g pitted dates
🍌2 Large Overripe Bananas
🍌120 g unsalted butter
🍌190 g SR flour
🍌1/4 teaspoon baking soda
🍌2 teaspoon vanilla essence
🍌50 g Milk
Try adding in cinnamon, or ground ginger for a seasonal spiced taste!
🍌Pre-heat oven to 180C and line a loaf tin
🍌Blitz the dates in your Thermomix (or food processor, recommend a NutriBullet or something simialrly strong) speed 10 for 10 seconds x2
🍌Add in all other ingredients, weighing as you go
– This is where you can add in any alternative flavours or seasonings. Try cinnamon, ginger, add in apple sauce, frozen berries or even a dollop of greek yoghurt for a really creamy texture.
– If you are not using a Thermomix, then empty your chopped dates into a bowl and set aside. In a another mixing bowl mix all you wet ingredients together (mashed bananas, eggs, vanilla, milk) and then in another bowl add your dry together (flour, baking soda and seasoning). Combine, add the dates and transfer to your baking dish.
🍌Thermomix Only: Mix on speed 5 for 15 seconds, then scrape down the sides and repeat.
🍌Bake uncovered for 40 minutes, and then cover with foil for a further 20minutes (1 hour total cooking time).
🍌Insert a skewer and if it comes out clean then it’s ready, if not leave for a further 10minutes.
Serve with a cuppa tea, share with family, friends and store in an air tight container for up to a week (if it really lasts that long!)
I LOVE mine smothered with peanut butter when it’s still fresh and hot from the oven!
